Abstract: In this master’s thesis, the production of monosodium glutamate from three different types of raw materials was modeled. Monosodium glutamate is used in a wide range of foods and pharmaceuticals. Therefore, optimizing the technology of its production from different raw materials can be of great practical importance. This work is aimed at studying the optimal processes and conditions for the production of monosodium glutamate from various raw materials. Technological aspects of the synthesis are analyzed to improve efficiency and reduce production costs. As part of the study, we modeled different variants of technological processes using three types of raw materials to produce monosodium glutamate. Assessment of the impact of various parameters on product quality and yields provides an opportunity to select the most optimal production method. The structure of the work includes an introduction, three main sections, including the economic aspect, conclusions and a list of references.
