Research of the Enzymes Application Efficiency for the Apple Juice Production

Abstract: The study of the process of obtaining juice with the use of enzyme preparations is presented in the master’s qualification work. The master’s qualification work consists of an explanatory note and a graphic work. The explanatory note contains the following main parts: introduction, scientific and theoretical foundations, rationale for improving the technological process, description of the technological scheme, calculation of cost factors, economic part and conclusions. The purpose of this work is to study the influence of the enzyme preparation Pectinex XXL on the yield of juice from apples of the "Champion" variety. When carrying out the process of enzymatic hydrolysis of raw materials using the cold method, the highest yield of juice was observed when the enzyme preparation was added in the amount of 0.1 g per 150 g of apple raw material. When carrying out the process of enzymatic hydrolysis of raw materials using the hot method, the highest yield of juice was observed when the enzyme preparation was added in the amount of 0.16 g per 150 g of apple raw materials. However, with cold enzymatic hydrolysis with the amount of the drug 0.1 g, more juice was released than with hot with the amount of the drug 0.16 g, by 41 ml. According to the results of determination of organoleptic and physicochemical parameters, all samples of the received juices correspond to GOST 51433-99 and GOST 51434-99. Optimal conditions for the use of enzyme preparations in the production of apple juice from "Champion" apples are proposed. It is shown that the most effective introduction of 0.1 g of the enzyme preparation during the cold method of enzymatic hydrolysis and 0.16 g when the hot method of enzymatic hydrolysis is carried out.
