Abstract: The master’s thesis on ‘Project of D-psicose production technology’ presents the developed production project, the main product of which is the rare sugar D-psicose (allulose). Psicose is an epimer of fructose, it also has a sweet taste and high water solubility, which makes it possible to use it in the food industry as a sugar substitute that is not included in the metabolic pathways of glucose conversion, thus having a low calorie content (0.2 kcal/g). As global market trends contribute to the reduction of sugar consumption in developed countries [1, 2], the demand for sweeteners and sugar substitutes is constantly growing, which makes it important to study the properties of psyllium and its methods of industrial synthesis, including biotechnological methods, which are more economically feasible and environmentally friendly than chemical synthesis methods [3]. In addition to its use in the food industry, D-psicose is also considered a promising compound for use in pharmaceuticals and medicine, as it is characterised by anti-atherosclerotic, anti-diabetic and antioxidant effects, and reduces the risk of obesity due to its effect on lipid metabolism. The paper analyses the literature data on D-psicose, its use in the food industry, pharmaceuticals and medicine, and analyses the chemical and biotechnological methods of psicose synthesis, which resulted in the development of a method for obtaining sugar from Jerusalem artichoke inulin by enzymatic conversion. The characteristics of the finished product, which is a crystalline psicose powder, as well as the characteristics of the raw materials and the biotransformer microorganism are given. The master’s thesis also contains a developed production flow chart and a description of the technological scheme. The material, technological and thermal calculations are presented, as a result of which the main and additional equipment for the production of the specified capacity was selected. The analysis of the competitive market has demonstrated a potentially high demand for the product, as modern consumers are seeking to reduce their sugar consumption, using substitutes that are not harmful to health. The cost and price of the product were calculated, and the economic indicators of production were analysed, which indicate the profitability of the enterprise. The appendices also include drawings of the main apparatus, an equipment and technological scheme, and a plan of the workshop building with its design features.
