Summary of the subject: "Occupational safety in trade and public catering establishments" is a regulatory discipline that is studied with the aim of forming in future specialists with higher education the level of knowledge and skills necessary for their further professional activity in legal and organizational issues of occupational safety, the basics of the physiology of occupational hygiene, industrial sanitation, safety of labor processes and fire safety, determined by the relevant state standards of education, as well as an active position regarding the practical implementation of the principle of prioritizing the protection of life and health of employees in relation to the results of the activities of commercial enterprises and catering establishments.
Опис: Legislative and regulatory framework of Ukraine on occupational safety. General safety requirements for production. Industrial sanitation. Theoretical and methodological principles of food security. State regulation in trade and public catering establishments on labor protection issues. Classification of harmful substances, types of hazards and ways of contamination of raw materials and food products. Adverse factors in the food industry. Safety of production processes. Electrical safety. Fire safety of technological equipment. Labor protection requirements for premises and systems of heat supply, ventilation and water supply. Methods of prevention of injuries and occupational diseases.
Assessment methods and criteria: Methods description for evaluation of the achievement level of the learning outcomes
Current control:
1. The execution of individual practical tasks.
2. Learning of theoretical material for individual practical tasks – test in system «Virtual learning environment».
Final control – examination control
1. The exam is based on the results of the subject’s study. It is carried out in written form according to papers that consist of test theoretical and practical tasks.
2. Oral component is carried out in the form of oral examination by the questions that form according to the paper questions from the written exam component.
Критерії оцінювання результатів навчання: The criteria for evaluation of the learning outcomes for students:
Current control:
1. The execution of individual practical tasks is 20 points.
2. Learning of theoretical material for individual practical tasks is 20 points.
The total estimation for the current control is 40 points.
Exam:
1. Written component is 50 points.
2. Oral component is 10 points.
The total estimation for the exam is 60 points.
The total estimation for the subject is 100 points.
Procedure and criteria for assigning points and estimations:
1. The estimation for the subjects is displayed on a 100-point scale and it is translated into a 5-point national scale. The scale of converting points into estimations: (1 – 49) points are an estimation of «unsatisfactory»; (50 – 70) points are an estimation as «satisfactory»; (71 – 87) points are an estimation as «good»; (88 – 100) points is an estimation as «excellent».
2. The maximum points for the correct performance of all individual practical tasks are 20 points. Reports on correctly performed practical tasks should contain the title and purpose of practical work, a list of initial data (task), a description of the used methodology with appropriate explanations, calculation dependencies with the interpretation of used values, correctly performed calculations, and conclusions.
3. The maximum points for the learning of the theoretical part about individual practical works are 20 points. To obtain the mentioned points, the student must do a test in the system «Віртуальне навчальне середовище».
4. The maximum points for the written component of the exam are 50 points. The exam is based on the results of the subject’s study. It is carried out in written form according to papers that consist of test theoretical and practical tasks.
5. The maximum points for the oral component of the exam are 10 points. The oral component is carried out in the form of oral examination by the questions that form according to the paper questions from the written exam component.
6. Each student receives his or her evaluation for the subject by summing up his or her results for the current control and exam (written and oral components).
Порядок та критерії виставляння балів та оцінок: 100-88 points - certified with an “excellent” grade - High level: the student demonstrates an in-depth mastery of the conceptual and categorical apparatus of the discipline, systematic knowledge, skills and abilities of their practical application. The mastered knowledge, skills and abilities provide the ability to independently formulate goals and organize learning activities, search and find solutions in non-standard, atypical educational and professional situations. The applicant demonstrates the ability to make generalizations based on critical analysis of factual material, ideas, theories and concepts, to formulate conclusions based on them. His/her activity is based on interest and motivation for self-development, continuous professional development, independent research activities, implemented with the support and guidance of the teacher. 87-71 points - certified with a grade of “good” - Sufficient level: involves mastery of the conceptual and categorical apparatus of the discipline at an advanced level, conscious use of knowledge, skills and abilities to reveal the essence of the issue. Possession of a partially structured set of knowledge provides the ability to apply it in familiar educational and professional situations. Aware of the specifics of tasks and learning situations, the student demonstrates the ability to search for and choose their solution according to the given sample, to argue for the use of a particular method of solving the problem. Their activities are based on interest and motivation for self-development and continuous professional development. 70-50 points - certified with a grade of “satisfactory” - Satisfactory level: outlines the mastery of the conceptual and categorical apparatus of the discipline at the average level, partial awareness of educational and professional tasks, problems and situations, knowledge of ways to solve typical problems and tasks. The applicant demonstrates an average level of skills and abilities to apply knowledge in practice, and solving problems requires assistance, support from a model. The basis of learning activities is situational and heuristic, dominated by motives of duty, unconscious use of opportunities for self-development. 49-00 points - certified with a grade of “unsatisfactory” - Unsatisfactory level: indicates an elementary mastery of the conceptual and categorical apparatus of the discipline, a general understanding of the content of the educational material, partial use of knowledge, skills and abilities. The basis of learning activities is situational and pragmatic interest.
