Learning outcomes: • know the theoretical basis of microbiological processes underlying technologies fermentation and winemaking; • know the morphological, physiological and cultural features of microorganisms that used in the production of microbial biomass; • be able to assess the impact of technological factors in the production of microbial biomass; • be able to control production processes, make rational technical and technological solutions and correctly and safely use microbial biomass.
