Learning outcomes: • know the features of chemical transformations of proteins, carbohydrates, lipids, minerals that are part of plant raw materials; • know the structure, properties, biological significance of substances of primary and secondary synthesis of plant raw materials; • have the skills of systematic analysis of the quality of plant raw materials and products in order to predict changes in the set of properties in the process of processing and storage; • be able to quickly detect and prevent the action of factors that contribute to the deterioration of plant materials and materials during processing and storage; • be able to make rational technical and technological decisions, competently and safely use vegetable raw materials.

Summary of the subject: Types of vegetable raw materials and their structure. Substances of primary and secondary synthesis. Vegetable proteins: structure, properties and their functions. Carbohydrates of vegetable raw materials. Raw materials containing lipids. The role of enzymes and vitamins in metabolic processes. Vegetable raw materials containing alkaloids. Saponins of plants. Phenolic compounds of plants. Minerals of plant sap.
Assessment methods and criteria: • written reports on laboratory works, oral examination (30%) • final control (exam): written-oral form (70%)
